Ingredients:
1 cup uncooked brown rice
1 can black beans (drained and rinsed)
1/2 yellow onion (peeled and chopped)
6 cloves garlic (peeled, pressed and minced)
1 large carrot (peeled and grated or shaved)
2 T hemp seeds
2 T oat flour
2 T tomato paste
1 tsp each of chili powder, cumin, smoked paprika
2 T GF soy sauce or tamari (I like Braggs liquid aminos)
1 T Worcestershire sauce
2 handfuls of chopped fresh herbs (basil, parsley or cilantro)
Salt and pepper to taste
Cook rice according to directions. Combine the garlic, onions, carrots and beans in a food processor or pulse slightly in a blender. Add the flour, seeds, herbs, spices, soy sauce and tomato paste to the garlic and onion mixture. Season with salt and pepper. Add in the rice and mix everything together by hand (add a few T water if needed to hold together). Form 6-8 patties and refrigerate for about 30-45 minutes. Bake in a 350 degree oven for about 15 minutes each side or until crispy. I like to serve them on whole grain buns (or GF buns if gluten free) with some lettuce, tomato and avocado and a touch of horseradish sauce.
