Smoked Salmon Sandwich

Ingredients:
2 large slices smoked Wild Alaskan sockeye salmon
2 slices Ezekial sprouted grain bread of choice
1-2 T basil pesto
Handful of fresh spinach leaves
4 thin slices of cucumber
4 thin slices of avocado
Fresh lemon wedge
salt & pepper to taste
Toast your bread and then spread a layer of the basil pesto on each slice of bread. Layer your sandwich with the spinach leaves first, then cucumber, avocado, salmon, dash of salt & pepper, squeeze of fresh lemon. Top with the other slice of toasted bread.
*I love this for breakfast too served open-faced on 1 slice of bread or a large slice of toasted French baguette!
