Breakfast Salad

Ingredients:
~1 cup of spring mix or fresh spinach
Handful of blueberries
1/2 avocado (cut into cubes or slices)
Handful of fresh wheat grass or any fresh herbs of your choice
1 T hemp seeds
1 T nutritional yeast
1 T citrus dressing
Assemble your greens on a plate. Top with avocado, blueberries, wheat grass, hemp seeds and nutritional yeast. Drizzle the salad with my homemade citrus dressing*. If eating eggs, this salad is really nice topped with an over-easy or poached egg.
