Sweet potato and avocado toast

Ingredients: 1 large sweet potato
1 soft avocado (mashed with a fork)
Handful of microgreens
1 T nutritional yeast
1/2 lemon
Sea salt and pepper to taste
Drizzle of balsamic vinegar or glaze (optional)
I like to prepare my sweet potato early in the week to be able to enjoy the toast in the mornings when I like. Wash the sweet potato well and then slice lengthwise in strips. Place the strips on a roasting pan and bake in the oven at 400 degrees for about 30-45 minutes until slightly crispy. I lay these out to cool and then place in a sealable container in the refrigerator.
When ready to eat the toast, place a few sweet potato strips in your toaster or toaster oven and toast until slightly crispy. Depending on your toaster, you may need to flip them and toast twice so they don't burn. Season up your mashed avocado with salt, pepper and a squeeze of fresh lemon. Spread your avocado on top of your toasted sweet potatoes and top with microgreens and nutritional yeast. If you'd like, you can drizzle the tops with a little balsamic vinegar or glaze.
