Cabbage Salad

Salad Ingredients:
1/2 head of fresh red cabbage chopped
~2 cups spring mix or fresh salad greens of your choice
1/2 cucumber sliced
1 pummet cherry tomatoes
Handful of fresh cilantro and parsley
~1/2 cup of sliced green onions
~1/4 cup of sliced raw almonds
~1/4 cup of mixed raw pepitas and sunflower seeds
Dressing Ingredients:
1/4 cup Balsamic vinegar
2 T Dijon mustard
2 T honey
1/2 cup EVOO
salt & pepper to taste
Mix together all salad ingredients in a large bowl (If not serving immediately, wait to add the nuts/seeds until right before serving). Season with sea salt and pepper.
Prepare dressing by whisking together in a medium sized bowl the mustard, honey and vinegar. Slowly add the EVOO while whisking until you reach your desired taste and consistency. Season with a dash of sea salt and pepper. Drizzle the dressing over the salad right before serving. Be sure to mix/shake the dressing well prior to adding to the salad if it has set for a while.
