High protein breakfast porridge

Ingredients:

1/2 cup steel cut oatmeal

2 cups vegan milk

1/2 tsp cinnamon

1 T organic, unrefined virgin coconut oil

1 tsp maple syrup or honey

1 T hemp seeds

handful of unsweetened dried fruit of your choice (cherries are nice)

handful of raw chopped nuts (optional)

Add the coconut oil and cinnamon to a sauce pan on medium heat. Stir well while the oil is heating. Once the oil is fragrant (about a minute or two) add your dried fruit and oats and coat in the cinnamon oil for another 1-2 minutes. Add in your milk and bring to a boil. Once boiling, reduce heat to low and simmer with a lid on for about 35-40 minutes. Keep stirring every few minutes so the oats don't burn and the milk doesn't overflow. Once the oats are cooked to your desired consistency then add in your maple syrup or honey. Mix well and continue to cook on low for another minute until well blended. Top with the hemp seeds and raw nuts.

You can refrigerate any extras overnight and then just reheat on the stovetop in the morning with a little more vegan milk.
