Simple Homemade Fries (My Favorite Comfort Food!)

Ingredients:
2 large organic russet potatoes
2 T EVOO
Salt and pepper
Preheat your oven to 400 degrees. Wash your potatoes well. You may peel them if you'd like but I like the skins on. Slice the potatoes lengthwise to your desired "fry" size. Drizzle with EVOO, salt and pepper. Roast in the oven for about 40-45 minutes turning once halfway through. You may need to roast a little longer depending on how crispy you like your fries. I like to serve with horseradish sauce and/or ketchup (look for one without high fructose corn syrup) on the side. Enjoy!
