Quinoa Salad

Ingredients:

Prepared couscous (1 cup dry couscous/2 cups filtered water)

1 whole tomato (chopped)

1 small cucumber (chopped)

1/2 cup pitted Kalamata olives (halved)

1/4 cup shopped green onions

Handful of fresh basil (rough chopped)

Handful of fresh mint (rough chopped)

3 T hemp seeds

3 T nutritional yeast

2 whole lemons

3-5 T of unfiltered EVOO

Himalayan pink salt to taste

Prepare couscous according to package directions. Mix together all veggies and fresh herbs in a large bowl and season with salt. Toss veggie mixture with the prepared couscous (cooled) and add the hemp seeds and nutritional yeast. Add the juice of the lemons, olive oil and season with more salt if needed. Best if enjoyed after chilled for a few hours!
